When thinking of replacing meat with vegetables there are many things to consider and concerns that I've heard, from "I wont get enough protein" and "I'm not going to be full enough.”  Two years ago when I worked at Airbnb we implemented a meat free Wednesday which upset most of the campus, but the Chefs loved the challenge.  And that's how I think you should approach it. As a challenge.

I have chosen to go a meal a day without meat whenever possible and found it pretty effortless.  Today there are tons of products you can use to skip the meat.  I start with the cuisine I'm planning to cook and it usually sorts itself out.  Nearly every culture has vegetarian dishes to learn and adapt to your own needs and tastes. Why try to make beef tacos veg when there's probably a Mexican vegetarian dish that's great as-is. Need more protein? can you add seeds, legumes, or peas.  Straight meat replacements are easy to find but if you are flexible and looking for a challenge think about the textures or bite you're looking to replace. From pulsed cauliflower spiced with taco seasoning to a hearty bolognese made with chopped mushrooms or chickpeas it's fairly easy to find a sub.
